Red, White, and Blue Popsicles

The perfect patriotic popsicle, layers of strawberries, coconut milk, and blueberries combine to make this sweet summer treat

Ingredients

For the Red Layer

  • 1 cup chopped strawberries
  • 0-3 teaspoons simple syrup (see notes)

For the White Layer

  • 3.5 oz unsweetened canned light coconout milk
  • 2-4 teaspoons simple syrup (see notes)
  • 1/8 cup unsweetened coconut flakes

For the Blue Layer

  • 1 cup blueberries
  • 0-3 teaspoons simple syrup (see notes)

OPTIONAL For Boozy Pops

  • 3 tablespoons alochol - divided (see notes)

Instructions

For the Red Layer

  1. Combine all ingredients in the blender (I used a pesonal blender cup on my ninja blender) and puree until liquified

  2. Split the liquid evenly between 4 popsicle molds, place in the freezer for at least 30 minutes

For the White Layer

  1. Stir all the ingredients together

  2. Pour the mixture over the red layer in the popsicle molds, splitting evenly between the 4 molds, place in the freezer for at least 30 minutes.

For the Blue Layer

  1. Combine the ingredients in a blender and puree until liquified, I reccomend doing this only a few minutes before you are ready to use it, otherwise the mixture will thicken and be hard to pour

  2. Pour the mixture over the white layer in the popsicle molds, splitting evenly between the four molds, place your popsicle sticks in the middle, and place in the freezer for at least one hour

OPTIONAL for Boozy Pops

  1. Add 1 tablespoon of your chosen alochol to each layer before mixing, follow remaining directions as listed
