Cheers to the weekend!
I don’t know what the weather forecast is for your area, but DC is supposed to be mid-60s! I can barely contain my excitement π It’s no secret that I despise the cold so I’m celebrating this temporary respite from winter misery with pomegranate spiced rum sparklers. Yes they are every bit as delicious as they sound.
And they’re pretty too! I love pomegranate juice (as you may remember from my pomegranate margaritas), and pomegranates are a superfood, so this cocktail is basically a must for your health, you’re welcome.
All you need are 3 ingredients and you are on your way to bubbly, sweet, tangy deliciousness! Spiced rum, pomegranate juice, and sparkling water. I’ve become pretty obsessed with sparkling water over the past year (check out my recipe for homemade honey gingerale) so my Soda Stream is one of my favorite appliances, but the store-bought stuff works just as well. For this particular cocktail I used Sailor Jerry Spiced Rum, it’s super delicious, and I think the label is adorable (yes, I make purchases based on labels, I also judge books by their covers). This recipe could not be any easier, literally combine everything in a glass with some ice and stir, done! PS I am obsessed with my no OXO measuring cups because they look like beakers and graduated cylinders (yes, that’s my chemistry grad student nerd flag, flying high).

- - 1.5 oz spiced rum (I used Sailor Jerry)
- - 2 oz pomegranate juice
- - 4 oz sparkling water
- - ice
- - Fill a glass with your desired amount of ice
- - Add spiced rum and pomegranate juice to glass
- - Top with sparkling water, stir, and serve
