I have the most amazing Strawberry Cream Cheese Brownies for you today! They are so rich and fudgy with sweet strawberries and just a touch of tang from the cream cheese.
I modified this recipe from my current most used cookbook, Dessert for Two: Sweet & Simple, Christina Lane’s third cookbook (I also have her first two books and I cannot recommend them highly enough). Christina is the blogger behind one of my all-time favorite blogs, Dessert for Two. She takes recipes for all the delicious baked goods (and some savory meals and drinks too!) you could ever want and scales them down to make a small batch, perfect for two people.
I love baked goods, both making and eating them, so Christina’s scaled down recipes are absolutely perfect for my two person household, a small number of sweet treats means they’re gone faster and I get to bake more 🙂
Leafing through the pages in Sweet & Simple I was drooling over every recipe and couldn’t decide what to make, everything looked so good!
But the best ever frosted brownies kept coming back to me. As a confessed chocoholic rich and fudgy brownies have always been my weakness, don’t get me wrong I love cookies and cakes but a good brownie is just everything!
When I set out to bake these I had some strawberries in the fridge I needed to use up so I decided to alter the recipe to make strawberry cream cheese brownies! I swapped the chocolate frosting (although now that I’m writing this I’m thinking next time I bake these I might just need to top these babies with a hefty layer of sweet chocolate frosting..) for strawberries and cream cheese that I swirled into the batter before baking.
So now you have a pretty pink swirl on top of your deep chocolate brownies, pretty and tasty, so decadent!
I also love that these brownies are made with all cocoa powder, which I always have on hand! Plus the recipe is so simple and results in seriously the best brownies I have ever had (and believe me I have eaten many, many brownies)! I’ve made these multiple times and every person I share them with is amazed at how rich and delicious they are, Christina knows what she’s doing when it comes to baked goods!

Strawberry Cream Cheese Brownies
Rich and decadent fudgu brownies with a swirl of sweet strawberries and slightly tangy cream cheese
Ingredients
- 1 stick unsalted butter
- ½ cup cocoa powder
- 1 cup sugar
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 1 large egg
- ½ cup flour
- 2 oz full fat cream cheese
- ½ cup diced strawberries
- 2 teaspoons powdered sugar
Instructions

Preheat the oven to 325 °F
Use parchment paper to line a 9” loaf pan
Place the butter, cocoa powder, and sugar in a microwave-safe bowl and microwave for 30 seconds
Stir the mixture and microwave for an additional 30 seconds
Stir again, if the butter is not melted microwave for another 30 seconds
Let sit for 1 minute to cool
Stir in the vanilla, salt, and egg
Add the flour and stir until well combined
Pour the batter into the prepared loaf pan
In a small bowl microwave the cream cheese for 10 seconds to soften completely, if necessary microwave in additional 5 second intervals until the cream cheese is soft
Add the strawberries and powdered sugar to the softened cream cheese mixture and use a fork to mash the strawberries and combine, when finished you should have a pink cream cheese mixture with some small chunks of strawberries
Pour the strawberry cream cheese over the brownie batter, use a knife to swirl the cream cheese mixture into the top of the brownie batter
Bake at 325 °F for 40 minutes, do NOT overbake, you want the brownies to be fudgy!
Let cool in the pan for at least 20 minutes
Use the parchment paper to lift the brownies out of the pan, cut and serve

You can store the brownies in an air tight container in the fridge for a few days (they will probably keep for up to a week but mine never lasted that long...)
