I think we could all use a drink, so I made you a Pomegranate Lime Rye Rickey!
I mentioned in my last post that my resolutions include baking more and drinking more (yes, my resolutions are the best)! I’m aiming to bring you at least one baked good and one cocktail a month. Our bar is currently overloaded and I figured coming up with new drinks would be a fun way to use some up!
Despite the handle of tequila that catches your eye the bar is roughly 80% whiskey, an insane amount of whiskey for 2 people (Luke would definitely disagree with me on this). So, I was googling fun whiskey drink ideas and I came across the Rickey, it’s apparently D.C.’s official drink, and it’s super simple, I had all of the ingredients necessary to make one. Normally a Rickey is made of bourbon (or gin, but that is one alcohol I cannot get behind), lime, and soda water. This seemed kinda boring to me so I decided to jazz it up by adding pomegranate. I love the combination of pomegranate and lime, so I knew this would be delicious!
This jazzed up pomegranate lime rye Rickey is so easy and so good – fruity without being too sweet, plus tons of bubbles! I love sparkling water, so this is the perfect way to put my sodastream to use as well!
I told you it was easy!
As you can see in the photo above I used Dad’s Hat Rye Whiskey for this pomegranate lime rye Rickey. It’s made in Pennsylvania (my home state) and really delicious, if you are looking for a new whiskey to try I highly suggest this one (note this is NOT sponsored, Dad’s Hat has literally no idea that I exist, I just actually really like the whiskey).
- 2 oz rye whiskey (I used Dad's Hat)
- juice of 1 lime
- 2 oz pomegranate juice
- 3 oz sparkling water
- ice as desired
- lime wedges for garnish (optional)
- Combine all ingredients in a glass or tumbler
- Stir to combine
- Serve, garnishing with a lime wedge
