I’ve got a glass of pure refreshment for you with this lemon berry ginger tequila kombucha
If you’ve never had kombucha, it’s a fermented tea drink. You make it by adding a scoby (a bacteria colony) to sweet tea and letting it sit and do it’s little scoby thing (i.e eating the sugar and fermenting the tea). Then you bottle it with any flavors you want! You can buy kombucha in most regular grocery stores, check the health food section (this is my favorite store bought variety), but it’s also suprisingly easy to make at home (it’s also way, way, way cheaper).
While I’m not the biggest fan of soda I love carbonation (as you may have noticed with all of my sparkling drinks, exhibits a, b, c) so kombucha is a great alternative when I want something with bubbles but more flavor than sparkling water.
This lemon berry ginger tequila kombucha cocktail is the first time I’ve tried mixing my kombuch a with booze and it definitely won’t be the last! I chose a berry (raspberry and blueberry) ginger lemon kombucha but any kind of berry flavor will work in this recipe. I added tequila and a little lemon ginger simple syrup. Depending on how sweet your kombucha is you may not need the syrup, but our homemade version isn’t as sweet as some of the store bought version so I found just 1/4 oz of syrup made the lemon berry ginger tequila kombucha cocktail perfect for me.
It’s an amazing combination of tart and sweet with just a hint of spice from the ginger.
This lemon berry ginger tequila kombucha cocktail is also super easy to make and contains only ingredients I always have on hand (kombucha, lemon, ginger, sugar, and tequila). Just combine everything in a glass with some ice and stir!
Lemon Berry Ginger Tequila Kombucha Cocktail
Tart and refreshing berry kombucha combined with lemon ginger simple syrup and silver tequila to make the perfect spring cccktail!
Ingredients
For the Cocktail
- 1/4-1 oz lemon ginger simple syrup (recipe below)
- 1 oz silver tequila
- 3 oz berry kombucha (see note)
- ice
For the Simple Syrup
- 1/4 cup sugar
- 1/4 cup lemon juice
- 1 inch piece of ginger
Instructions
For the Simple Syrup

Peel and thinly slice the ginger into rounds

Combine all ingredients in a small sauce pan, heat over medium heat until the sugar is dissolved

Remove the pan from the heat and allow to cool

You can make the syrup in advance and store in a jar in the fridge for a few weeks
For the Cocktail

Combine the syrup and tequila in a glass, fill with ice and pour the kombucha over top, serve immediately
Recipe Notes
- You can really use any berry flavored kombucha you like, I used homemade raspberry/blueberry/ginger, but if you want to buy it GT's trilogy is my favorite store bought to use
- I like silver tequlia better but gold also works if that's more your style
- If you don't have time to make the syrup (or are just feeling lazy) you can substitute honey or other liquid sweetener
