As I’m writing this I’m sitting in the airport waiting for a flight to come back from visiting Luke in Illinois. Remember last year when I wrote this post about a super delicious dinner in Chicago? Well, this time I flew into Indianapolis where I had another scrumptious dinner to tell you about, plus I have lots of fun things to talk about from my long weekend in Champaign-Urbana (and maybe I’ll get around to telling you about last year’s trip too, which I promised to do last year but never did… oops). In the meantime I’m trying to ignore the scent of Cinnabon so I figured writing a blog post on a delicious snack I made a few days ago would be a good distraction. I’m also planning on making this many many times again, this popcorn is the perfect accompaniment to a movie night.
Popcorn is one of my favorite snacks, because it’s super simple and you can jazz it up in a variety of ways, for this particular variety I chose chocolate peanut butter and sea salt. The sweet and salty combination on the popcorn is amazing, and it’s really easy to make.
Pop some popcorn. I used an air popper, but anyway you want to make it is fine, you just need plain popcorn (if you use salted popcorn I would cut out the sea salt, but that’s totally up to you too).
Then you melt the chocolate peanut butter slightly. I used a homemade chocolate peanut butter, but this is a store good store bought version that I’ve used before, or you could just combine peanut butter and melted chocolate and make your own on the fly. Pour the melted chocolate peanut butter over top of the popcorn and stir gently until well mixed.
I then sprinkled sea salt over top.
It’s a bit messy, totally worth it.
Curl up with a bowl of this on the couch and watch something good!
- -1/4 cup popcorn kernels (or about 8 cups popped popcorn)
- -1/4 cup chocolate peanut butter
- - sea salt
- -Pop the popcorn as desired
- -Melt the peanut butter slightlly, microwave for 20 second intervals until smooth, or warm in a sauce pan
- -Pour the chocolate peanut butter over top of the popcorn and stir gently until the popcorn is coated
- -Sprinkle the sea salt over top of the popcorn and toss to combine
